Simple 7 Layer Dip with Homemade Salsa

Ingredients
- 1 large can reduced-fat refried beans
- 1 large bunch green onions
- 1 large bunch cilantro
- 3 cans diced tomato and peppers
- Lemon juice
- 1 squirt lime juice
- 6 ounces green chiles
- Salt
- 1 container low-fat or reduced-fat sour cream
- 2 large tomatoes
- 1 head lettuce
- 1 small can black olives
- 1 bag shredded reduced-fat or low-fat Mexican cheese
- 2 jalapeno peppers
- 1 small onion
Instructions

Wash green onions and cilantro. Let them dry. Chop up green onions, both white and green part. Chop up cilantro where leaves are attached to stems.

Open can of green chiles. Combine all three ingredients in large bowl. Pour lemon juice on ingredients that are in bowl. Put a good layer of lemon juice on ingredients. Give one good squirt of lime juice on ingredients. Sprinkle a bit of salt in bowl.

Open the three cans of tomatoes/peppers and pour some of the liquid out into the sink. Pour cans into the large bowl with the other ingredients. Mix everything up. The salsa is done.

Open can of refried beans. Warm beans in a sauce pan. Spread beans on bottom of a 9-inch x 13-inch pan. Chop up small onion very fine and spread on top of layer of beans.

Spread entire container of sour cream in pan. Pour salsa on top of sour cream. Make sure that you don't get the liquid in this layer.

Finely chop the lettuce. Spread next layer. Chop up tomatoes. Spread next layer. Spread layer of shredded cheese next. Spread chopped black olives next. Chop green onion . Sprinkle on top. Chop jalapenos and sprinkle on top.
