This is a great recipe staple to remember, since it uses basic pantry items for the seasoning, and works well on all sorts of fish and seafood, whether you're pan searing, roasting, or grilling the fish. Rainbow trout has got to be one of my favorite fish, but I very rarely see them on sale. Salmon fillets would be a great substitute, and they are more widely available.
