Salmon Cakes Appetizer
These cakes are cheaper and easier than crab cakes with all the taste of your favorite appetizer. With just a few ingredients, create this amazing appetizer or entree that everyone will love!

Ingredients
- 1 small can red salmon (100 g)
- 2 eggs, separated
- 50 grams butter
- 1 tablespoon flour
- 1 cup fresh bread crumbs
- 1 tablespoon parsley, chopped finely
- 1 cup milk
- salt and pepper to taste
Instructions
- Make a roux with the butter and flour, add milk and juice from salmon. Stir to thicken and simmer for 2 minutes.
- Remove from heat and add the two egg yolks, parsley, and the salmon meat chopped finely. Stir to combine.
- Whip egg whites until stiff (with a little salt). Grease an ovenproof dish and pour in the salmon mixture.
- Fold in breadcrumbs and egg yolks until no white blobs remain.
- Bake in an over 375 degrees F for about 25 minutes.

Maybe it's me but I don't understand step 4 of this recipe. How can you fold in the egg yolks when they have been added in step2. Do you mean egg whites?

Have just started making this and egg yolks are mentioned twice ,is it supposed to be egg whites that are folded in with the bread crumbs?Will be cooking this later so will post again how it turned out and how it tasted
