Healthier Carrabba's Italian Grill Copycat Meatballs
For a light and tasty dish that may be the best meatball recipe you've ever tried, whip up a batch of these Healthier Carrabba's Italian Grill Copycat Meatballs. This lightened-up restaurant copycat recipe features three different types of lean meats.
Ingredients
- 1/2 pound lean ground pork
- 1/2 pound lean ground veal
- 1/2 pound lean ground beef
- 2 large eggs, lightly beaten
- 1/4 cup reduced fat Parmesan cheese, grated
- 4 garlic cloves, finely chopped and cooked until crispy
- 1/3 cup dried whole wheat bread crumbs
- 1/4 cup parsley, finely chopped
- 1 cup light olive oil
- Salt and black pepper, to taste
Instructions
- In a medium bowl, mix together the beef, pork, veal, eggs, cheese, garlic, bread crumbs and parsley. Add salt and pepper to taste.
- Heat the light oil in large wide pan over medium high heat. Roll the meat mixture into 1 1/2-inch balls and set aside.
- Fry each meatball in the oil until golden brown. Remove with a slotted spoon to a plate lined with paper towels.

There's a mistake in the recipe above. It states Lamb in the recipe under instructions. Lamb is not an ingredient in this recipe. It's suppose to be Veal not Lamb.
