Pear Custard Pancake

Next time you decide to make pancakes from scratch, give this Pear Custard Pancake recipe from Namaste Foods a try. This baked pancake recipe is loaded with fruit and is ready is about 30 minutes.

Notes

Recipe variation: Sliced apples or peaches are perfect in here, too.

Ingredients

  • 1/2 cup Namaste Biscuits, Piecrust & More
  • 2 tablespoons butter or margarine
  • 1/2 cup milk
  • 3 eggs
  • 1 medium pear, peeled and thinly sliced
  • 2 tablespoons brown sugar
  • 1/4 cup raisins
  • 1 pinch salt

Instructions

  1. Preheat oven to 400 degrees F. Place butter or margarine in a 9 inch pie plate. Heat in the oven until melted.
     
  2. Combine biscuit mix, milk, eggs and salt in small bowl; whisk until smooth. Arrange pear slices and raisins in bottom of pie plate. Pour batter on top. Sprinkle with brown sugar.
     
  3. Bake for 20 to 25 minutes. Dust with powdered sugar if desired.
     
  4. Top with fresh berries, syrup, Greek yogurt and/or whipped cream.
