Chocolate Chunk Hazelnut Baked Donuts

Ingredients

  • 1 cup white wheat flour (can use any kind of flour)
  • 3 tablespoons cocoa powder (I used Hershey's Dark)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup soymilk (or milk of choice)
  • 1/4 cup hazelnuts
  • 3 tablespoons pure cane sugar
  • 1/4 cup maple syrup
  • 2 tablespoons vegetable oil
  • 2 tablespoons Earth Balance (or butter)
  • 1 chia egg (1 tablespoon chia seeds plus 3 tablespoons water mixed in a small bowl and set aside for 20 to 30 minutes)
  • 1 cup Enjoy Life Mega Chocolate Chunks (or any other chocolate chunk/chip)

Instructions

  1. Ground up the hazelnuts in a processor until chopped very small, but not yet a nut butter.
     
  2. Mix all of the above, besides the chocolate chunks together in a large bowl and stir with a spoon until it forms a batter. Fold in the chocolate chunks.
     
  3. Place batter in a greased donut pan or muffin pan and bake for 15 minutes at 350 degrees F (maybe more if their muffins so keep an eye on them.)
     
  4. Drizzle with warm Nutella and/or melted chocolate for best results.
