Mini Baked Glazed Donuts

Ingredients
- 1 cup whole wheat pastry flour, or white whole wheat flour
- 1/2 cup sugar, or equivalent sugar substitute suitable for baking
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup skim milk
- 1 egg
- 4 tablespoons butter, or equivalent butter substitute
- 1 teaspoon pure vanilla extract
- GLAZE:
- 1/2 cup powdered sugar
- 1 tablespoon skim milk
- Sprinkles (optional)
Instructions
- Preheat oven to 350 degrees F.
- Mix together all the wet ingredients in a small sauce pan using a whisk over medium heat until butter is melted but the mixture is still cool enough to touch, about 4 to 6 minutes.
- In a separate bowl, combine dry ingredients and use a whisk to mix thoroughly and sift the flour so there are no lumps.
- Add the wet ingredients to the dry to create a sticky dough.
- Using a donut pan, measure out about a tablespoon of dough for each donut. Use a wet finger to smooth out the tops to create a nicer looking donut.
- Bake for 12 to 14 minutes.
- Mix together powdered sugar and skim milk with a whisk to form a glaze for your donuts.
- After the donuts are cooled, dip the tops into the glaze and then promptly shake sprinkles while the glaze is still wet. Place on wire rack until dry, approximately 1 hour.
