Ingredients
- 2 lean pork chops or filets
- 1 cup fresh apples, chopped
- 1 cup fresh or dried apricots, chopped
- 1/2 cup fresh cranberries (optional)
- 1 medium onion, chopped
- 2 ribs celery, sliced in 1/2-inch pieces
- 1/2 cup natural apple juice
- 1/2 cup brown sugar
- 1/4 cup dry sherry or wine (or try more apple juice)
- Salt and pepper to taste
- 1 1/2 tablespoon cornstarch mixed with 2 tablespoons cold water
Instructions
- Combine all ingredients in slow cooker; cover and cook 7-9 hours on low.
- Approximately 30 minutes before serving, pour liquid into a separate container to skim off excess fat.
- Stir in cornstarch mixture and return broth to slow cooker.
- Continue cooking on low until smooth and it appears thickened.
