    Simple Pork Chops with a Fruit Glaze

    Ingredients

    • 2/3 cup no sugar added peach or apricot preserves
    • 1/2 cup bottled light Italian dressing
    • 2 tablespoons Dijon mustard
    • 4 lean or center-cut pork chops, (1 inch thick, about 1 1/2 pounds)

    Instructions

    1. Combine the  preserves, dressing and mustard in a medium bowl.
       
    2. In a large non-aluminum baking dish, arrange the chops in one layer.
       
    3. Pour 3/4 cup of the marinade over the chops, coat thoroughly. Keep the remaining marinade and refrigerate.
       
    4. Cover the pan and marinate in the refrigerator, turning occasionally, ideally for 3 to 24 hours.
       
    5. Be sure to prepare your grill or broiler in advance.
       
    6. Remove pork chops from the refrigerator and discard used marinade.
       
    7. Grill or broil the chops, turning once and brushing frequently with the reserved marinade, until the chops are done.
       
    8. Remove from grill and serve immediately.
