- 2/3 cup no sugar added peach or apricot preserves
- 1/2 cup bottled light Italian dressing
- 2 tablespoons Dijon mustard
- 4 lean or center-cut pork chops, (1 inch thick, about 1 1/2 pounds)
Instructions
- Combine the preserves, dressing and mustard in a medium bowl.
- In a large non-aluminum baking dish, arrange the chops in one layer.
- Pour 3/4 cup of the marinade over the chops, coat thoroughly. Keep the remaining marinade and refrigerate.
- Cover the pan and marinate in the refrigerator, turning occasionally, ideally for 3 to 24 hours.
- Be sure to prepare your grill or broiler in advance.
- Remove pork chops from the refrigerator and discard used marinade.
- Grill or broil the chops, turning once and brushing frequently with the reserved marinade, until the chops are done.
- Remove from grill and serve immediately.
