Chicago's Finest Pork Loin Roast

Ingredients
- 3 pounds boneless pork loin roast
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 jar Officer Mullen's Chicago's Finest Apple Sauce
- 3 tablespoons Dijon mustard
- 3 fresh rosemary sprigs
Instructions

Preheat oven to 350 degrees F. Spray a baking pan and roasting rack with cooking spray.

Trim any extra fat away from the roast. In a large skillet over medium-high heat, add the oil. When the oil is hot, add the roast and brown on all sides, about 3 minutes per side.

Sprinkle with salt and pepper and position on the rack in the baking pan.

In a small bowl, combine one cup of the apple sauce with the mustard; spoon all over the surface of the roast.

Tuck one rosemary sprig under the roast and two on top and bake for 1 hour to 1 hour and 15 minutes until the roast tests 150 degrees F on an instant read internal thermometer.

Remove from the oven and let stand at least 10 minutes or up to 25 minutes before slicing to serve. Serve with remaining apple sauce on the side.
