24 Hour Veggie Salad
Make an amazing 24 Hour Veggie Salad for the best taste. This healthy salad recipe is loaded with all your favorite fresh vegetables, including peas, carrots, mushrooms and broccoli. Crispy turkey bacon and hard boiled eggs add a savory element to this dish. They call this a "24 Hour" salad, because you let it chill in your fridge for 24 hours before serving it to your guests. You can easily whip this dish up anytime of the year, and it's absolutely perfect to bring to your next potluck.
Ingredients
- 4 torn iceberg lettuce, romaine, spinach, leaf lettuce, and/or Bibb lettuce
- 1 cup sliced fresh mushrooms
- 1 cup broccoli flowerets
- 1 cup frozen peas
- 1 cup shredded carrots
- 2 hard-boiled eggs, sliced
- 6 slices turkey bacon, cooked and crumbled
- 3/4 cup shredded low-fat Swiss or low-fat Cheddar cheese
- 1/4 cup thinly sliced green onions
Instructions
1. Place lettuce in a 3-quart salad bowl.
2. If desired, sprinkle with salt and pepper.
3. Layer atop lettuce in the following order: mushrooms, broccoli, and/or peas, carrots, eggs, bacon, 1/2 cup of the cheese, and green onions.
4. Spread dressing over top of salad.
5. Sprinkle with the remaining 1/4 cup cheese.
6. Cover and chill for 2 to 24 hours.
7. Before serving, toss to coat vegetables.
