BBQ Ranch Chickpea Salad
"BBQ Ranch Chickpea Salad is a vegan, gluten-free and oil-free version of a restaurant favorite. It’s hearty enough for a main meal and is ready in under 30 minutes. To make the flavorful pan-roasted garbanzo beans, all you need to do is simmer them in your favorite BBQ sauce. You can use whatever vegetables you like in the salad. My favorite combination is corn, tomatoes, and avocado. And to me the best part of the salad is the homemade vegan Ranch dressing! It's made from cashews and is oil-free."

I have a similarly flavored method for preparing garbanzo beans that makes for a great protein packed snack food! I drain and rinse the chickpeas, and then blot them dry with paper towel. Then I toss them with a little olive oil and a couple of tablespoons of my favorite barbeque dry rub. I spread them out on a rimmed sheet pan lined with foil and bake until crispy.
