I love the idea of using pistachios instead of croutons! I don't care for the store bought croutons at all - they're always stale tasting, dry, and too hard for my sensitive teeth. Spinach is so much more substantial nutritionally than your standard lettuce, and it is full of iron and folate. Where might I find the walnut oil used here? I have never seen it before.
