- 1 (14-ounce) hearts of palm spears, sliced into rounds
- 1 large tomato
- 1 large avocado
- 1/4 cup chopped cilantro
- 1 teaspoon dijon mustard
- 1/2 teaspoon fresh ginger
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 tablespoon coconut milk
- 1/4 teaspoon salt
Instructions

In a large bowl combine hearts of palm rounds, cubed tomato, cubed avocado and chopped cilantro. Add salt and pepper to taste.

In a small bowl whisk together dijon mustard, olive oil, lime juice and coconut oil. Whisk until smooth.
