"Steak and grilled vegetables - perfect weeknight supper. A great tip for frying steak: flipping. It is by far the best technique: get the pan smoking hot and to ensure the meat is cooked evenly through even with thickish cuts, and even aiming for rare, you need to flip the meat EVERY 15 SECONDS. I kid you not. It’s stressful, and you need a timer with visible seconds countdown, and to look at it constantly, but the result is astonishing. If you can’t manage 15, try at least every 30 seconds."

This flipping technique sounds rather interesting, I am going to have to try it and see if this really does make it perfect. I always have used a spice rub with flake sea salt just before searing, and just let the steak sit until it releases from the pan, spice rub the other side, and then flip it only once - that's what I was taught to do. This recipe looks so flavorful and bright with the grilled veggies.
