This fresh seasonal side dish would pair well with much more than Mexican style food. It would make a lovely accent to any sort of grilled meats, poultry, or seafood! When those big ripe ears of corn are plentiful, and super cheap, I can't help but buy a lot. This is sort of like a fresh take on a corn relish - like the night and day difference between a fresh salsa and the salty stuff in the jar.
