Amazing Club Sandwiches
Using turkey bacon, the healthy kind, turkey and some veggies you can create a great club sandwich. Keep your variety of meats in one great meal.
Notes
Variations: Prepare as above but instead of turkey, use 2 large slices cooked ham, corned beef, pastrami or roast beef. Instead of bacon use 2 slices Swiss cheese or 4 slices cooked Canadian bacon. In place of the pickle try Hamburger relish, Hot Taco relish,slices of pickled beets or pickled onions.
Ingredients
- 6 turkey bacon slices
- 6 white bread slices, (substitute with whole wheat bread) toasted
- light mayonnaise
- lettuce leaves
- 2 large cooked turkey slices
- salt
- pepper
- 1 large tomato.sliced
- sliced gherkin pickles
Instructions
- In 10 inch skillet over medium heat, cook bacon slices until crisp. Drain on paper towels.
- Spread one side of each bread slice with light mayonnaise.
- Arrange lettuce leaves on 2 slices.
- Top with turkey. Sprinkle with salt and pepper then cover with another bread slice, mayonnaise side up.
- Top each sandwich with more lettuce, half of the tomato slices, 3 cooked bacon slices, pickle, mayonnaise side down.
- Cut sandwiches diagonally into fourths. Secure each quarter with decorated toothpicks. Arrange, cut sides up, on individual plates.
