Lightened Up Egg Salad Sandwich
Lightened Up Egg Salad Sandwich is a hearty meal that doesn't taste healthy at all. This egg salad recipe replaces some of the mayo with Greek yogurt. It's light, fresh, and creamy. You can use this simple swap for chicken salad and tuna salad, too. Sandwich the egg salad in between a freshly baked baguette, arugula, Roma tomato and avocado, and youll have yourself the greatest and most delicious sandwich within minutes.

This looks delicious! I would try it with 0% fat Greek yogurt and leave out the mayo all together. I would add a bit of mustard. I love pickles so I would chop some up and add them too. I like the addition of arugula. It has a great peppery taste.

I'm on home dialysis so, I'm making some adjustments. I'm using what I have on hand such as: Fresh cooked diced chicken breasts, celery seed, dill, garlic powder, fresh diced onion. Also using some diced eggs & tortillas instead of bread. I'm on a budget & cannot go to the store until later. I will use what I can to make my salad taste good for lunch & dinner. At dinner time I will have a side of vegtable to keep my fiber along with protein in my diet. It is very hard to come up with different good things to have to eat on a very strict diet. I will also use mayo. instead of sour cream or any fruit. Do not like sour cream, or fruit in my salads plus, I do not have any fruit on hand. Look forward to trying sounds decilious.
