Simple Cracker Barrel Style Potato Soup

Ingredients
- 3 pounds potatoes, diced into 1/2-inch by 1-inch pieces
- 8 ounces celery, chopped
- 2 1/2 quarts water
- 4 ounces low sodium chicken base
- 1/2 teaspoon pepper
- 1 tablespoon Jane's Krazy Mixed-up Salt
- 1 1/2 quart skim milk
- 4 ounces margarine, melted
- 1 cup flour, all-purpose or white whole wheat
Instructions
- Place potatoes, celery, water, chicken base, salt and pepper into a large pot, and simmer for 20 minutes.
- Then, add skim milk and heat mixture to 170 degrees F.
- In bowl, blend melted margarine and flour till smooth. Then add one quart of soup broth and blend. Using wire whip, add back to pot and blend well. Simmer for another 20 minutes.
