Chilled Fresh Tomato Soup
It's amazing what kind of flavors you can experience when you create a chilled soup. This version is made with fresh tomatoes, onion, lemon and spices. Top with a spoonful of sour cream just before serving for a beautiful presentation.

Ingredients
- 2 pounds ripe tomatoes, peeled
- 1/2 cup onion, chopped
- 1 - 2 inch lemon peel strip
- 1 fresh parsley sprig
- 2 teaspoons paprika
- 1 tablespoon brown sugar
- 2 cups dry white wine
- 2 tablespoons lemon juice
- 1/2 cup fat-free sour cream
- Pepper to taste
Instructions
- Cut tomatoes into eighths. In large microwave bowl, combine tomatoes, onions, lemon peel, parsley, paprika, brown sugar and wine. Microwave, uncovered on high for 20 minutes or until tomatoes are soft. Stir after 10 minutes of cooking time.
- Remove parsley and lemon peel and discard. Place tomato mixture in blender. Blend for 2 to 3 minutes on high or until smooth. Scrape sides of blender occasionally. Pour tomato mixture into large glass bowl. Stir in lemon juice and pepper to taste.
- Chill, covered for 3 hours before serving. Top each serving with a spoonful of sour cream just before serving.

This soup is not suitable for children due to the amount of wine called for in the recipe. Soup tastes terrible as the flavor did not blend after chilling for 4 hours. Maybe it would have tasted better with longer chilling period but the taste does not warrant a second chance.
