"This hearty vegetable soup is very filling, warming, and comforting. The soup is made with ingredients you most likely already have in your pantry. All you need are some vegetables, diced tomatoes, red beans, vegetable broth, and bulgur. This is a perfect soup to make in advance and then enjoy for lunch and dinner all week long. It's also good for freezing. This soup is high in fiber and vegan. For a gluten-free version, use quinoa instead of bulgur."
