Guilt Free Mashed Potatoes

Ingredients
- 2 pounds small red potatoes, skins on, quartered
- 1 small butternut squash, peeled, seeded and cubed
- 1/2 cup evaporated skim milk
- 1/2 cup butter substitute
- kosher salt, to taste
Instructions
- Put the potatoes in a saucepan with water to cover by inch.
- Put the squash in another saucepan with water to cover by 1 inch. Bring both saucepans to a boil, lower the heat and simmer until they are soft. This should take about 15 minutes for the potatoes and 10 minutes for the squash.
- Warm the evaporated milk in a saucepan.
- Drain the potatoes and the squash and return to a saucepan.
- Over low heat, mash the vegetables, gradually adding the evaporated milk and the butter substitute.
- Stir in any salt and serve hot.
