Spinach and Cheese Stuffed Turkey Meatloaf

Many beef meatloafs are bland and greasy; this Italian-inspired turkey meatloaf is full of spices, mushrooms, cheeses, and delicious greens, and ground turkey keeps it light. Don't let your meatloaf get boring - try this recipe.

Ingredients

  • 1 cup mushrooms, coarsely chopped
  • 1/4 cup onions, chopped
  • 1 10 oz. package frozen spinach, thawed, drained
  • 1/2 cup part skim mozzarella cheese, shredded
  • 1/4 cup low-fat Parmesan cheese
  • 1 pound ground turkey
  • 3/4 cup oatmeal
  • 1/2 cup skim milk
  • 1 egg white, slightly beaten
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Heat oven to 375 degrees F. Lightly spray skillet with no-stick cooking spray.
     
  2. Cook mushrooms and onion over medium-low heat about 4 minutes or until onion is tender.

  3. Remove from heat; stir in spinach, 1/4 cup mozzarella cheese and Parmesan cheese. Set aside.
     
  4. Combine turkey, oats, milk, egg and seasonings; mix well.
     
  5. Spoon 2/3 of turkey mixture lengthwise down center of 11 x 7-inch glass baking dish. Form a deep indentation down middle of turkey; fill indentation with spinach. Top with remaining turkey, sealing edges to completely cover spinach filling.

  6. Bake 30 to 35 minutes or until cooked through. Sprinkle with remaining mozzarella cheese; return to oven 1 to 2 minutes or until cheese melts. Let stand 5 minutes before slicing.

Don't want to turn on oven? Shape into 4 ovals & bake in your electric skillet. You can wrap in heavy foil & bake on the grill.

I loved this recipe- been putting boiled eggs in center of my meatloaf- but I have high cholesteral - so the spinach is much healthier - thanks for the idea!

This recipe was delicious! I don't even like meatloaf and I loved it. The meat was moist and not heavy tasting, (I played with the meat seasoning a little and added basil, oregano and garlic salt.) The filling reminded me of a stuffed spinach and mushroom pizza. Even my kids liked it!

I thought this recipe was delicious! I just made it tonight and everyone loved it. It needs to be cooked longer than the directions (closer to 45 minutes). Other than that, it was right on. I will definitely make this again.
