I am so glad you posted these great recipes! I adore spinach (it's a good way to help me get caclium since I am on a non-dairy diet), but I only seem to ever use it 3 ways - with pasta, with chickpeas/tomatoes and just quickly steamed. I could use a few more yummy spinach recipes and so many of these sound wonderful! Hello dairy free creamed spinach, where have you been all my life?! :)
