This has all the great flavors of a dressed up homemade macaroni and cheese, but with a fraction of the calories. You can't go wrong with the combination of cheese and garlic! I have been "sneaking" in finely chopped cauliflower into my son's mac and cheese for a while now, in order to get him to eat more veggies. This healthy swap looks like a dish my whole family will enjoy.
