Sweet Potatoes with Warm Bacon Dressing

Ingredients
- 1 sweet potato, cut into cubes
- 2 teaspoons olive oil
- Salt and black pepper
- 1 piece bacon
- 1/2 shallot, finely minced
- 2 tablespoons cider vinegar
- 2 teaspoons olive oil
- Salt
- Red pepper flakes
Instructions
- Preheat oven to 450 degrees F.
- First, drop the sweet potato cubes into a microwave safe bowl. Toss with 2 teaspoon olive oil, salt and pepper. Cover the bowl with a wet paper towel. Microwave on high for 3 minutes. Carefully remove the wet paper towel because there will be a lot of steam. Pour the potatoes onto a parchment lined baking sheet. Roast in the oven for 15 minutes.
- While they are cooking, start preparing the dressing by cooking a slice of bacon in a medium sauté pan. Once the bacon is fully cooked, remove it and place on a paper towel lined plate. Pour a little bit of the bacon grease out of the pan. Toss in the shallots and cook until they are relaxed and lightly browned, about 4 minutes. Pour in the vinegar, olive oil, salt and red pepper flakes and stir until every ingredient is evenly mixed. Turn off heat and cover if the potatoes aren’t done yet.
- When potatoes are done, carefully pour them into a bowl and toss with the dressing and crumble the bacon on top and toss. Enjoy immediately as a side to scrambled eggs or at dinner with grilled pork tenderloin.

This would have been good except for the Cider Vinegar. 2 Tablespoons is quite a bit, for 1 sweet potato. I added 2 eggs to this, and in every bite, the only thing I could taste was Cider Vinegar. I'm not even sure it's needed at all, but if you use it, use 1 Teaspoon tops!
