i made a loose interpretation of this dish yesterday and it was great! i subbed in olive oil for butter and added red pepper flakes and it was really good )

This does look delicious! I make a similar dish and add spiralized carrots . It looks really pretty with the extra punch of colour. I also use olive oil instead of butter and just a pinch of salt. I find the salt in the parmesan cheese adds lots of taste to the dish.
