The recipe that you have included with this post for the vegan ricotta is so clever - the vinegar and nutritional yeast really adds that depth of flavor to the soaked cashews that is necessary to remind you of cheese. I have seen people make a cheeseless "ricotta" before using blended tofu, but the texture never seemed very appetizing to me.
