"Baked tomatoes stuffed with herby breadcrumb filling. For the vegetarian option leave out the anchovies and add a little more salt. These tomatoes are an excellent appetizer or a side dish; or serve them over rice for a healthy veggie main. You can easily scale up the recipe to feed a crowd or as a potluck dish. And they can be made ahead, stored in the fridge and baked when needed. Plus they are delicious at room temperature so a good party food."
