Jarlsberg Spread in Roasted Onion Cup
You may have had cheesy appetizers before, but few stack up to the immense flavor found in this recipe for Jarlsberg Spread in Roasted Onion Cup from Jarlsberg Lite Cheese. Instead of a bread bowl, this healthy snack idea has an onion bowl!

Makes1 1/2 cups of spread
Ingredients
- 1 large (12 to 16 ounces) Spanish-style onion, roasted
- 1/2 pound Jarlsberg Lite cheese, grated
- 3 tablespoons butter or margarine, softened
- 3 tablespoons milk
- 2 tablespoons red or yellow pepper, roasted
- 1 dash garlic powder
- 3 drops hot sauce, such as Tabasco
- 2 tablespoons white wine
- Nutmeg, grated
Instructions
- Slice 1/2 inch from top of onion. With spoon, scoop out center, leaving 1/2 inch thick shell. Flute shell, if desired.
- Fill cavity with crumpled up aluminum foil, spray lightly with oil and bake in preheated 425 degree F oven for 25 to 30 minutes. If you like, prepare other assorted vegetables (thick slices zucchini, eggplant, tomato, etc.) to roast as well.
- While onion is roasting, measure out 1/4 cup onion pulp and chop for immediate use (freeze or refrigerate remainder for later use).
- Combine pulp with cheese, margarine, milk, pepper, garlic pepper, hot sauce and wine. Combine everything in a blender or food processor, mix until smooth. Let stand 1 hour or refrigerate overnight to blend flavors.
- Spoon mixture into onion shell, sprinkle with nutmeg and bring to room temperature before serving. Serve with 1/4-inch rounds of cucumber, zucchini or yellow squash or 1-inch strips of red, yellow, green pepper or whole grain crackers as dippers.
