Instructions
To Make the Cauliflower Fried Rice
-
Cut core and leaves from cauliflower, then pull apart florets. Place into a food processor in two batches and process until cauliflower resembles grains of rice.
-
In a wide non-stick skillet over medium-high heat, place 1 tablespoon oil and the carrots. Stir for 3 to 4 minutes until tender. Add cauliflower, edamame, and half of the onions and stir until well mixed.
-
Beat the eggs in a small bowl with the soy sauce. Push vegetables to the edges of the pan and pour in the beaten eggs, stirring until the vegetables are hot and mixed.
-
Add the final sesame oil and serve garnished with the rest of the onions and sesame seeds. Enjoy!

Ever since I tried this recipe, I have been using riced cauliflower in a lot of different ways! Whether you are looking to cut down on your carbs or just trying to get more vitamins into your diet, it makes a tasty substitute for white rice or potatoes. It is great in casseroles, soups, or even on its own tossed with roasted garlic and a little butter!
