I don't believe that I have eve heard of those tofu - based noodles before - I can't wait to try them in my favorite Asian style dishes! The miso dressing looks so flavorful and healthy - I would definitely go for the fresh ginger with this. If you don't care for the fresh mint, cilantro, parsley, or even some fresh thai basil would be really good on this too!
