Healthy Cranberry Orange Bars

This low-fat recipe is diabetic-friendly, but delicious for everyone. These cranberry-orange bars make a great afternoon snack or treat in your child's lunch box. These are also a great autumn dessert for dinner parties and gathering.

Ingredients

  • 1/2 cup cranberries, chopped finely
  • 1 orange, ground with skins
  • 1/4 cup raisins
  • 2 tablespoons brown sugar
  • 2 2/3 tablespoons margarine
  • 1 egg, or 3 tablespoons egg substitute
  • 1/2 teaspoon vanilla
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Combine the cranberries, oranges, raisins, and brown sugar in a mixing bowl. Set aside.
     
  2. Cream the margarine until light and fluffy.
     
  3. Add egg and beat well.
     
  4. Blend in the vanilla.
     
  5. Gradually add the dry ingredients to the creamed mixture.
     
  6. Stir in the cranberry mixture and pour the batter into a greased 8-inch square baking pan.
     
  7. Bake at 350F degrees for 30 to 40 minutes or until browned on top.
     
  8. Cool in the pan on a wire rack and cut into bars.
