Strawberry Oat Bars
These Strawberry Oat Bars are decadently delicious and the best part is, you can enjoy them at any time of day. Dorothy Delaney has this sweet bar filled with lots to crunch. With dates and strawberries in the mix, this is one of those no bake heart-healthy snacks that tastes like dessert but is totally guilt free!
Notes
Add coconut to the crust, cacao nibs to the filling, or use raspberries instead of strawberries.

Ingredients
- 1 1/2 cup dates, pitted and soaked for at least 10 minutes (save the soaking water)
- 1 1/2 cup almond meal or dried almond pulp
- 2 tablespoons rolled oats
- 1 pinch sea salt
- 1 pinch vanilla powder or extract
- 1/2 teaspoon cinnamon
- 1 cup strawberries, to blend with chia and honey
- 1/2 cup strawberries, thinly sliced
- 1 tablespoon chia seed, soaked
- 1 tablespoon honey
Instructions

Pulse the dates, nuts, oats, and salt in a food processor until combined.

Add some of the soaking water, if needed, to make a chewy crust.

Press the date mixture into the bottom of a 9 x 5 inch loaf pan.

Mash half the strawberries with the honey and chia and spread on top of date mixture.

Top with remaining strawberries.

Slice into rectangles and chill.
