These lighter pumpkin cheesecake bars are made with Greek yogurt and plenty of pumpkin. Unlike typical cheesecakes which are rich and dense, these healthy dessert bars are light and fluffy. They may not be as caloric as a slice of pumpkin cheesecake, but they are definitely just as creamy and delish. This recipe uses Biscoff cookie crumbs for the crust, but you can make your crust out of graham crackers or Oreo cookies.
