Thai Beef Skillet

Ingredients
- 1 pound lean ground beef
- 2 red bell peppers, thinly sliced
- 2 tablespoons fresh ginger, chopped
- 3 garlic cloves, chopped
- 3 tablespoons peanut butter (natural if possible)
- 1 teaspoon red pepper flakes
- 1 tablespoon sesame oil
- 2 tablespoons lime juice
- 2 tablespoons low sodium soy sauce
- 1/2 cup fresh cilantro, chopped
- Romaine Lettuce (as much as you like)
Instructions

Brown meat in large nonstick skillet or wok, about 5 minutes, then drain fat.

Add red peppers, garlic and ginger, and chili flakes. Cook about 4 minutes.

Meanwhile, whisk together peanut butter, sesame oil, soy sauce, lime juice, and cilantro. NOTE: You may do this step before you begin cooking. It just ads about 2 minutes to cooking time.

Remove meat from heat. Add the peanut butter sauce to the meat and mix in the skillet or wok.

Serve on a bed of the lettuce, or serve the lettuce and meat separately so the diners can make their own wraps.
