I agree that this would be a great dish to pass for Sunday brunch. I think that if you diced up some lean ham and added that instead of the bacon it would be even lower in fat and calories. I am not much of a morning person, so I love that you can make this dish the night before, and just pop it into the oven while you're making coffee and you have a delicious hearty meal.

I always thought of casseroles for lunch or dinner not for breakfast! It looks absolutely delicious and has vegetables to make it nutritious as well. Maybe the only thing I would not add is the bacon. I am so excited, I going to try out this yummy recipe for Sundays brunch!
