Savory Oatmeal Bowls
"What I love most about savory oatmeal bowls are the freshness of the produce paired with the flavor of the oatmeal. They’re smokey, cheesy, crunchy, creamy, and spicy all at once! Preparing savory oatmeal bowls is really simple. If you have some quick coconut bacon on hand, great! If not, prep that first, and start cooking the oatmeal while the bacon crisps in the oven. First, you’ll need a medium sized pot! In the pot, boil some steel cut oats with vegetable broth, nutritional yeast, smoked paprika, and salt. While that simmers, in a small skillet, combine a couple slices of onion with a tiny bit of oil and sauté until translucent. Remove the onions and in the same skillet, add some water, kale leaves and minced garlic. Blanch for a few minutes, and you’re already ready to assemble your savory oatmeal bowls."
