    Veggie Breakfast Pizza

    Who wouldn't love an excuse to eat pizza for breakfast? Layer a pre-made dough with your favorite morning treats, like eggs, low-fat cheese and your favorite veggies. You can't go wrong with this easy recipe.

    Ingredients

    • 2 cups fresh vegetables of your choice
    • 1 cup shredded low-fat cheese
    • 4 eggs
    • 1 1/2 cup fat-free sour cream
    • 2 tablespoons fresh parsley, chopped
    • Prepared whole wheat pizza dough or pastry

    Instructions

    1. Roll pastry to fit into a 12-inch pizza pan. Bake at 425 degrees F for 5 minutes.
       
    2. Sprinkle veggies and cheese evenly over crust.
       
    3. In a bowl, beat eggs, sour cream and parsley until smooth; pour over pizza.
       
    4. Bake for 20-25 minutes or until pizza is puffy and lightly browned.
