Just checking -- only 2 eggs?

I prepared this recipe in one dish as shown, not in individual dishes. Make sure you squeeze the water out of the frozen spinach well. This was very delicious as a 'side dish', but I turned it into a 'main meal' by serving it over brown rice, and with a green salad and garlic breadsticks on the side. Totally awesome!

    LUBBOCK spinach.....any way it comes
