I have made versions of chili and cornbread in a skillet before, but this one pot wonder knocks it out of the park! I admit I was a little skeptical of the butternut squash in a tex - mex dish like this at first, but I think I really like the sweet and spicy combination. Plus it gives it more substance - like a festive meat and vegetable stew!
