5 Ingredient Salsa Verde Chicken Enchiladas
"A super quick and healthy dinner casserole! Store bought Salsa Verde Sour Cream and Rotisserie chicken make for a quick and easy dinner that will feed a large family!"

Ingredients
- 2 cups cooked, shredded chicken
- 1 24 oz jar salsa verde
- 1 cup sour cream - light or whole fat
- 2 cups shredded mexican style cheese
- 12 flour tortillas
Instructions

Preheat oven to 375 degrees and spray 9 x 13 baking dish with non stick spray.

Combine Salsa Verde and Sour Cream in large mixing bowl.

Add 1/4 cup of salsa and sour cream mixture to bottom of casserole dish.

Fill each tortilla with 1/4 cup chicken and several heaping tablespoons of cheese.

Roll tortillas and place seam side down into casserole dish.

Cover with remaining salsa and sour cream mixture.

Cover dish with foil and bake for 35 minutes.

Remove from oven, top with remaining grated cheese and bake an additional 5 minutes.

Serve with sour cream, avocado and your other favorite mexican condiments.

I make a similar recipe using both salsa verde and regular tomato salsa, depending on what I have on hand. I substitute zero fat greek yogurt for the sour cream and use a low fat cheese, to reduce fat and calorie content. I sometimes add cilantro and corn for bulk and taste.
