Ingredients

  • 1/4 cup all-purpose flour
  • 1/4 cup light butter
  • 1 cup Sunrich SōL Unsweetened
  • 1 chicken bouillon cube
  • 1 whole rotisserie chicken
  • 4 garlic cloves, minced
  • 2 cups cooked wild rice
  • 3 tablespoons bread crumbs
  • 1/2 cup Cheddar cheese

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. In a small saucepan, combine the butter, flour, and Sunrich SōL Unsweetened. Cook and stir over low heat until slightly thickened and bubbly. Allow the sauce to reduce until it begins to coat the sides of the saucepan.
     
  3. Add the garlic and rotisserie chicken to the Sol sauce. Toss until well combined. Fold in the cooked wild rice.
     
  4. After thoroughly combining the wild rice to the mixture, transfer to a baking dish. Sprinkle with bread crumbs. Top with cheddar cheese.
     
  5. Bake in the oven for 25 minutes, or until the cheddar cheese is a golden brown.

ok, you obviously forgot to mention that the whole chicken should be taken off the bone and cut up. Can you clarify and explain how much chicken this is (I have cooked chicken breast that I would use and cut up). For example is it 1 cup of chicken?

I assume the whole rotisserie chicken is already cooked and you take the meat off the bones and add it to the butter/flour/Sol mixture. Is that correct?

So easy and really yummy...the sunflower milk is really creamy and has a nutty flavor that marries so well with the wild rice. It's a winner!
