Balsamic Sage Chicken
Healthy chicken recipes have a reputation for being bland and unappealing, but this Balsamic Sage Chicken recipe from Alli from An Open Cookbook will totally change that perception! Balsamic vinegar, sage and capers add loads of flavor to this healthy chicken main dish recipe. Alli says, "This simple recipe tastes as though you have been cooking it for hours. Ingredients
- 2 large (or 3 medium) chicken breasts, pounded thin and cut in half
- Black pepper
- Garlic salt
- 1 yellow onion, diced
- 2 tablespoons olive oil
- 1/3 cup balsamic vinegar
- 1 can (15.5 ounces) diced tomatoes
- 1/4 cup capers
- 3 tablespoons fresh sage, minced
- Salt and black pepper, to taste
Instructions
- Season the chicken breasts with black pepper and garlic salt on both sides. Set aside.
- Heat a medium to large skillet or cast iron pan on medium heat. Pour in the olive oil. Allow to heat up. Add in the onions and saute for about 5 minutes.
- Carefully place the chicken into the pan and saute each side for about 5 minutes on each side.
- Pour in the balsamic, tomatoes and capers. Allow to simmer for about 10 minutes.
- Sprinkle in the fresh sage, salt and pepper. Allow to cook until the chicken is fully cooked. Turn off heat and serve immediately.
