I love these! Definitely helped myself to seconds. I didn't have any quinoa on hand, so subbed brown rice - it worked very well and I enjoyed them so much!

Oh no. I think I'm going to try making these with tofu; I was so bummed when I saw there was chicken in them! I bet they're delicious.
