Chicken Skewers with Peanut Sauce

Ingredients
- 12 ounces chicken breast, cut into bite-size pieces
- 2 tablespoons vegetable oil
- 2 tablespoons plus 2 Tbs. low-sodium soy sauce
- 3 tablespoons creamy peanut butter
- 1 tablespoon scallions (1-2 scallions), chopped
- 2 tablespoons lime juice
- 1 tablespoon honey
- 4/5 tablespoon garlic powder

Instructions

To make the dip, mix 2 tablespoons of soy sauce, peanut butter, scallions, lime juice, honey, and garlic powder until smooth.

To make the chicken skewers: Marinate the chicken in two tablespoons of soy sauce and the vegetable oil for 20 minutes or overnight.

Pat each piece dry before cooking.

If you have a griddle: pat the chicken dry with a paper towel, skewer the pieces raw, and cook for two minutes on each side. Let the skewers hang over the edge of the griddle. Serve with the peanut dipping sauce.
