I love that this gyro recipe uses the boneless skinless chicken thighs as opposed to the boneless breasts, since it has a lot more flavor and gets really tender. They have a little bit more fat, but since these are stuffed with a ton of fresh veggies, that's OK! The lemons and fresh herbs lend a wonderful bright flavor to the meat.
