Ingredients
- 1 pound boneless skinless chicken breasts, cut into strips
- 1/4 cup Asian Toasted Sesame Salad Dressing (or a combination of sesame oil, orange juice and garlic)
- 1/4 cup orange juice
- 3 cups stir-fry vegetables, frozen or fresh
- 3 cups brown rice, cooked
- 1/4 cup peanuts or cashews, chopped
Instructions
- Cook chicken in large nonstick skillet on medium-high heat for 5 - 7 minutes, or until cooked through. (you can add some chicken broth to make the chicken moister).
- Stir in dressing and juice. Bring to a boil.
- Add vegetables. Cook 5 - 7 minutes, or until heated through, stirring occasionally.
- Serve over rice. Sprinkle with nuts as as garnish if desired.
