Back when I was in college, quick sheet pan meals like this were a big comfort to me. During the school / work week I usually had to grab a fast bite in between classes near my college. On Friday nights, after the rat race was over, I would make chicken and potatoes in my toaster oven for my roommate and myself. The smell in my little apartment those nights would always remind me of home. A great way to relax and refuel!
