I made a lightened up taco salad for a family function using this recipe, and it was a big hit! I baked this up the night before and the next day spooned the cold mixture on top of a layer of crisp lettuce in a 9 x 13 pan, hit it with a sprinkling of reduced fat Monterey jack cheese, and served some baked tortilla strips and a jar of avocado dressing on the side for topping. So much healthier that the ground beef taco salad I'm used to seeing at restaurants in that fried tortilla bowl!
